Under the 'Labels' tab in Gmail settings, there is now a 'Show in IMAP' checkbox next to 'Chats' that will deliver chat logs to your email client of choice.

Google makes an effort to allow users to "liberate" their data, as is clear from the Data Liberation "Front's" website.
